Ingredients
  

  • 1 rotisserie chicken shredded
  • 1 tablespoon olive oil
  • 1 onion finely chopped
  • 3 cloves garlic minced
  • 2 carrots peeled and sliced
  • 2 celery stalks sliced
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 package (20 oz) cheese-filled tortellini
  • 4 cups fresh spinach leaves
  • Grated Parmesan cheese for serving

Instructions
 

Prepare Ingredients:

  • Remove the meat from the rotisserie chicken and shred it. Set aside.
  • Chop the onion, mince the garlic, peel and slice the carrots, and slice the celery.

Sauté Aromatics:

  • In a large soup pot, heat olive oil over medium heat.
  • Add chopped onions and minced garlic, sauté until fragrant.
  • Add Vegetables: Add sliced carrots and celery to the pot. Sauté for a few minutes until the vegetables begin to soften.
  • Broth and Seasoning: Pour in the chicken broth, add dried thyme, dried oregano, salt, and pepper. Bring to a simmer.
  • Add Tortellini: Once the broth is simmering, add the cheese-filled tortellini. Cook according to the package instructions, usually for about 8-10 minutes.
  • Add Chicken and Spinach: Stir in the shredded rotisserie chicken and fresh spinach leaves. Cook until the spinach wilts and the chicken is heated through.
  • Adjust Seasoning: Taste the soup and adjust the seasoning with salt and pepper as needed.
  • Serve: Ladle the soup into bowls. Sprinkle with grated Parmesan cheese on top.
