Ingredients
  

For the Taco Salad:

  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 cup cherry tomatoes halved
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • ½ cup diced red onion
  • ¼ cup fresh cilantro chopped
  • 1 cup tortilla chips crushed

For the Classic Guacamole:

  • 3 ripe avocados
  • ¼ cup diced red onion
  • 1 clove garlic minced
  • 1 medium tomato diced
  • 1 lime juiced
  • Salt and pepper to taste

For the Marg-a-Ree-ta:

  • 1 ½ oz tequila
  • 1 oz triple sec
  • ¾ oz fresh lime juice
  • Ice cubes
  • Salt for rimming optional
  • Lime wedges for garnish

Instructions
 

Prepare Taco Salad:

  • a. In a skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat.
  • b. Add the taco seasoning and cook according to package instructions.
  • c. In a large mixing bowl, combine cooked meat, black beans, corn, cherry tomatoes, lettuce, cheddar cheese, red onion, and cilantro.
  • d. Toss the ingredients together until well combined.

Make Classic Guacamole:

  • a. In a bowl, mash the ripe avocados with a fork.
  • b. Add diced red onion, minced garlic, diced tomato, lime juice, salt, and pepper.
  • c. Mix until all ingredients are well combined.

Prepare Marg-a-Ree-ta:

  • a. In a blender, combine tequila, triple sec, fresh lime juice, and ice cubes.
  • b. Blend until smooth.

Assemble Taco Salad:

  • a. Sprinkle the crushed tortilla chips over the taco salad for added crunch.
  • b. Serve the taco salad in individual bowls, topping each portion with a generous scoop of guacamole.

Serve Marg-a-Ree-ta:

  • a. Rim the glasses with salt (optional).
  • b. Pour the Marg-a-Ree-ta into glasses and garnish with lime wedges.
