Ingredients
  

  • 1.5 lbs ground turkey
  • 1 large onion diced
  • 3 cloves garlic minced
  • 1 bell pepper diced (any color)
  • 1 can (15 oz) fire-roasted tomatoes
  • 1 can (15 oz) kidney beans drained and rinsed
  • 1 can (15 oz) black beans drained and rinsed
  • 1 cup frozen corn kernels
  • 1 can (6 oz) tomato paste
  • 3 cups chicken or turkey broth
  • 2 teaspoons ground cumin
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1-2 tablespoons olive oil

Instructions
 

  • In a large skillet, heat olive oil over medium heat. Add ground turkey and cook until browned. Transfer the browned turkey to the slow cooker.
  • In the same skillet, sauté onions, garlic, and bell pepper until softened. Transfer to the slow cooker.
  • Add fire-roasted tomatoes, kidney beans, black beans, frozen corn, tomato paste, cumin, chili powder, smoked paprika, salt, and pepper to the slow cooker.
  • Pour the broth into the slow cooker and stir everything together.
  • Cook on high for 4-6 hours or on low for 8-10 hours, until flavors meld and turkey is fully cooked.
  • Let the chili rest for 15 minutes before serving.
