Ingredients
  

Salmon Burgers:

  • 1.5 lbs fresh salmon fillet skin removed, chopped
  • ¼ cup breadcrumbs
  • ¼ cup green onions finely chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon ginger minced
  • 2 cloves garlic minced
  • 1 egg beaten
  • Salt and pepper to taste
  • 4 burger buns

Sesame-Soy Glaze:

  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger grated

Cucumber Salad:

  • 1 cucumber thinly sliced
  • ¼ cup rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon sesame seeds
  • Salt to taste

Instructions
 

  • Preheat Broiler: Preheat your broiler to high.
  • Prepare Salmon Burgers: In a bowl, combine chopped salmon, breadcrumbs, green onions, soy sauce, sesame oil, ginger, garlic, beaten egg, salt, and pepper.
  • Form the mixture into 4 patties.
  • Place the patties on a baking sheet lined with parchment paper.
  • Make Sesame-Soy Glaze: In a small saucepan, combine soy sauce, honey, rice vinegar, sesame oil, and grated ginger.
  • Heat over medium heat until the mixture thickens slightly, stirring constantly.
  • Broil Salmon Patties: Brush the salmon patties with the sesame-soy glaze.
  • Place under the broiler for about 4-5 minutes per side, or until cooked through and slightly crispy on the edges.
  • Prepare Cucumber Salad: In a bowl, toss thinly sliced cucumber with rice vinegar, sugar, sesame seeds, and a pinch of salt. Set aside.
  • Assemble Burgers: Toast the burger buns under the broiler for 1-2 minutes.
  • Place a salmon patty on each bun.
  • Drizzle with additional sesame-soy glaze if desired.
  • Top with a generous portion of cucumber salad.
  • Serve: Serve the salmon burgers with extra glaze on the side.
