  • ¼ teaspoon black pepper

  • Prep the Chicken: Pat the chicken thighs dry with paper towels. In a small bowl, mix together garlic powder, onion powder, smoked paprika, dried thyme, salt, and black pepper.
  • Season the Chicken: Rub the chicken thighs with the spice mixture, ensuring an even coating.
  • Preheat the Instant Pot: Set the Instant Pot to "Saute" mode and add olive oil. Once hot, sear the chicken thighs skin side down for 2-3 minutes until golden brown. Flip and sear the other side for an additional 2 minutes.
  • Pressure Cook: Pour in the chicken broth and deglaze the pot by scraping up any browned bits from the bottom. Cancel the "Saute" mode. Place the trivet in the Instant Pot and arrange the seared chicken thighs on top.
  • Seal and Cook: Close the Instant Pot lid, ensuring the valve is set to "Sealing." Select "Manual" or "Pressure Cook" and set the timer to 10 minutes.
  • Natural Release: Once the cooking time is complete, allow the Instant Pot to naturally release pressure for 5 minutes. Then, carefully switch the valve to "Venting" to release any remaining pressure.
  • Rest and Serve: Open the lid and let the chicken thighs rest in the Instant Pot for 5 minutes before transferring them to a serving platter. Spoon some of the cooking liquid over the chicken.
