Ingredients
  

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 medium onion diced
  • 1 bell pepper sliced
  • 1 zucchini sliced
  • 1 cup cherry tomatoes halved
  • 8 ounces penne or your favorite pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs oregano, thyme, basil
  • Fresh parsley chopped (for garnish)
  • Garlic bread for serving (Optional)

Instructions
 

  • Season the Chicken: Season the chicken pieces with salt and black pepper.
  • Sear the Chicken: Heat olive oil in a large pot or Dutch oven over medium-high heat.
  • Sear the chicken pieces until golden brown on all sides. Remove and set aside.
  • Saute Aromatics and Vegetables: In the same pot, add minced garlic and diced onion. Saute until softened.
  • Add sliced bell pepper, zucchini, and cherry tomatoes. Cook until vegetables are tender.
  • Cook Pasta: Stir in the pasta, chicken broth, and heavy cream. Bring to a boil.
  • Reduce heat to a simmer and cook until the pasta is al dente, stirring occasionally.
  • Add Chicken Back: Return the seared chicken to the pot.
  • Season and Finish: Stir in grated Parmesan cheese and dried Italian herbs.
  • Adjust seasoning with salt and pepper to taste.
  • Garnish and Serve: Allow the dish to rest for 5 minutes.
  • Garnish with fresh chopped parsley.
  • Serve hot, optionally with garlic bread on the side.
