Ingredients
  

  • 1 lb ground beef
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 1 can (15 oz) black beans drained and rinsed
  • 1 can (10 oz) enchilada sauce store-bought or homemade
  • 2 cups Mexican blend cheese shredded
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8-10 flour tortillas
  • Chopped fresh cilantro for garnish optional
  • Sour cream and salsa for serving

Instructions
 

  • Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or oil.
  • In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  • Add chopped onions and minced garlic to the skillet. Sauté until the onions are translucent.
  • Stir in the black beans, ground cumin, chili powder, salt, and pepper. Cook for an additional 2-3 minutes until the mixture is well combined and heated through.
  • Remove the skillet from heat and set aside.
  • Warm the tortillas in the microwave for about 20 seconds or until pliable.
  • Spoon a generous amount of the beef mixture onto each tortilla, roll them up, and place them seam side down in the prepared baking dish.
  • Pour the enchilada sauce evenly over the rolled tortillas, ensuring they are well covered.
  • Sprinkle shredded cheese over the top of the enchiladas.
  • Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 5 minutes or until the cheese is melted and bubbly.
  • Remove from the oven and let it rest for 5 minutes before serving.
  • Garnish with chopped cilantro if desired, and serve with sour cream and salsa.

Notes

  1. Feel free to customize the filling with additional ingredients such as diced bell peppers or corn.
  2. If you prefer a spicier kick, add a pinch of cayenne pepper or use a hot enchilada sauce.
  3. These enchiladas can be prepared in advance and refrigerated. Just bake them when ready to serve.
