In a large bowl, combine olive oil, balsamic vinegar, minced garlic, dried oregano, smoked paprika, salt, and pepper. This will be your marinade.
Place the beef cubes in a ziplock bag or airtight container and pour half of the marinade over them. Seal and refrigerate for at least 30 minutes (longer for more flavor).
Preheat the grill or grill pan to medium-high heat.
Thread marinated beef, bell peppers, red onion, zucchini, and cherry tomatoes onto skewers, alternating for a colorful presentation.
Brush the vegetable skewers with the remaining marinade.
Grill the kebabs for about 12-15 minutes, turning occasionally until the beef is cooked to your liking and the vegetables are slightly charred.
While the kebabs are grilling, cook the orzo according to package instructions.
Once the kebabs are done, let them rest for about 5-10 minutes.
Serve the beef and vegetable kebabs over a bed of cooked orzo, garnished with chopped fresh parsley.
- Soak wooden skewers for at least 30 minutes before using to prevent them from burning on the grill.
- Feel free to customize the vegetable selection based on your preferences.
- You can add a squeeze of lemon juice over the kebabs before serving for a citrusy kick.
- Make extra marinade for basting during grilling if desired.
- These kebabs can also be baked in the oven if grilling is not an option.
