First, grab a pound of big shrimp. Take off their shells, sprinkle some salt and pepper, and maybe a bit of red pepper if you like it a bit spicy. Heat up olive oil in a big pan and toss the shrimp in until they turn pink. Take them out and put them aside.

Now, let’s deal with garlic. Mince four cloves or use a garlic press if you have one. Put the garlic in the same pan, let it sizzle for just 30 seconds – don’t burn it! Pour in half a cup of white wine, let it bubble for a couple of minutes. This mixes up all the good flavors stuck to the pan.

  • Prepare Shrimp: Pat the shrimp dry with paper towels and season with salt, black pepper, and red pepper flakes if using.
  • Sauté Shrimp: Heat olive oil in a large skillet over medium-high heat. Add the seasoned shrimp to the skillet and cook for 1-2 minutes per side until they turn pink. Remove the shrimp from the skillet and set aside.
  • Infuse Garlic: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn the garlic.
  • Deglaze with Wine: Pour in the white wine, scraping any flavorful bits from the bottom of the skillet with a wooden spoon. Let it simmer for 1-2 minutes to reduce slightly.
  • Create Sauce: Return the cooked shrimp to the skillet. Add lemon zest and lemon juice. Stir well, allowing the flavors to meld for an additional 1-2 minutes. Adjust salt and pepper to taste.
  • Finish and Serve: Toss in the fresh parsley and cooked pasta, ensuring everything is well coated in the flavorful sauce. Remove from heat.
  • Presentation: Transfer the Shrimp Scampi and pasta to a serving platter. Optionally, sprinkle with additional red pepper flakes and grated Parmesan cheese.
