Ingredients
  

  • 1.5 lbs beef sirloin cut into 1-inch cubes
  • 1 red bell pepper cut into chunks
  • 1 yellow bell pepper cut into chunks
  • 1 red onion cut into wedges
  • 1 zucchini sliced into rounds
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

For serving:

  • 2 cups cooked orzo

Instructions
 

  • In a large bowl, combine olive oil, balsamic vinegar, minced garlic, dried oregano, smoked paprika, salt, and pepper. This will be your marinade.
  • Place the beef cubes in a ziplock bag or airtight container and pour half of the marinade over them. Seal and refrigerate for at least 30 minutes (longer for more flavor).
  • Preheat the grill or grill pan to medium-high heat.
  • Thread marinated beef, bell peppers, red onion, zucchini, and cherry tomatoes onto skewers, alternating for a colorful presentation.
  • Brush the vegetable skewers with the remaining marinade.
  • Grill the kebabs for about 12-15 minutes, turning occasionally until the beef is cooked to your liking and the vegetables are slightly charred.
  • While the kebabs are grilling, cook the orzo according to package instructions.
  • Once the kebabs are done, let them rest for about 5-10 minutes.
  • Serve the beef and vegetable kebabs over a bed of cooked orzo, garnished with chopped fresh parsley.
