Ingredients
  

  • 16 oz (450g) cherry tomatoes halved
  • 1 block (8 oz or 225g ) feta cheese
  • ½ cup (120ml) olive oil extra-virgin
  • 4 cloves garlic minced
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes adjust to taste
  • Salt and black pepper to taste
  • 12 oz (340g) pasta (penne or any preferred type)

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large baking dish, combine the halved cherry tomatoes, block of feta cheese in the center, minced garlic, dried oregano, red pepper flakes, salt, and black pepper. Drizzle the olive oil over the ingredients.
  • Gently toss the tomatoes to coat them in the olive oil and spices, ensuring the feta cheese is placed in the center.
  • Bake the mixture in the preheated oven for 25-30 minutes or until the tomatoes are softened and the feta cheese has melted and developed a golden crust.
  • While the tomato and feta mixture is baking, cook the pasta according to the package instructions until al dente. Drain the pasta and set aside.
  • Once the tomato and feta mixture is done baking, remove it from the oven. Use a wooden spoon or spatula to mash the feta and tomatoes together until well combined.
  • Add the cooked pasta to the baking dish, tossing it with the tomato-feta mixture until the pasta is evenly coated.
  • Garnish with fresh basil leaves and serve immediately.
